Reimagining the commercial kitchen: The Lightfry™ journey

After 18 months of menu development, cooking trials, and sensory testing, we explored every angle of what Lightfry™ could do. We worked with food manufacturers eager to learn more and trialled a variety of chips—from economy to premium—from trusted names like McCain and Koffmann. Chefs put the technology through its paces, preparing every style and shape of potato, from fresh to frozen, straight-cut to triple-cooked. And we didn’t stop there. We tested fresh and roast vegetables, hors d’oeuvres, meat and fish (both coated and uncoated), cheesy bites, bread, and so much more.

But it wasn’t just about cooking—we were rediscovering the pure, mouth-watering flavours of foods too often masked by oil. As commercial kitchen designers, we needed to ensure Lightfry wasn’t just impressive—it had to be practical, viable, and operator-friendly. We rethought kitchen layouts, found new solutions, and identified the best locations for Lightfry—tucked away as a hardworking prep tool or proudly positioned at the pass. We even created concepts to celebrate the “Chip Hero” in grab-and-go restaurants and quick-service formats, delivering speed and volume for high-demand environments.

We tested it all—from frozen to refreshed cooking—and explored its role in contract catering, across government and private sector kitchens, on and offshore. We asked: why wouldn’t a restaurant, big or small, consider air frying as a smarter alternative to deep-fat frying?

We looked at everything—health and wellbeing benefits, menu labelling, and sustainability credentials. We addressed fire safety and open-kitchen risks, considered indirect costs like cleaning, slip and burn hazards, and highlighted the major cost savings from eliminating oil and FOGs. And through it all, we kept discovering more and more value.

We’ve also been inspired by the success stories from Lightfry partners across the USA, Canada, and Europe—and now, we’re proud to be part of that journey here in the UK and Northern Ireland, bringing meaningful change to commercial kitchens across the region.
